Cooking! Olive risotto

Many of you have heard me moan about the food here. It’s not that I don’t like Indian food, I definitely do, but to be perfectly honest, I get sick of it. In the US, I am accustomed to eating all different types of food, including lots of light food like salads. Here, I can’t eat much raw food because it isn’t clean enough, so most vegetables need to be cooked to kill the bacteria and parasites and all. I also like eating many different types of dishes, but here, it is pretty much Indian food, in all it’s spicy and heavy glory, for every meal. The plus side of this is that it has encouraged me to improve my cooking skills and make all different types of dishes, with limited ingredients and resources. Some of the best dishes have been stir-fry with homemade teriyaki sauce, homemade falafels and hummus and an olive risotto.

See, olives are one of the few imported snacks we can come by here in Udaipur, so when I found myself with a half empty jar of olive juice, I couldn’t bear to pour it out. So I made something which turned out to be delicious, an olive-y risotto. I never really use recipes, just mix things together, so my recipe is very estimated, but I’ll do my best and give it a try if you ever find yourself with extra olive juice and no gin to make martinis…Here is the recipe (it’s extremely flexible):

Ingredients:

2 large spring onions

2 mini eggplants peeled and chopped

1 tomato

A handful of fresh peas

1 half jar of olive juice

1 cup of rice

Rice:

Make however much (I did about a cup) of white rice. Mid-way cooking, add some fresh peas to the mix. Stop cooking when rice is a few minutes from cooked.

In another pan:

Stir fry the onions in some olive oil, after about a minute, add the eggplant.

Cook for about 2-3 minutes, then add tomato.

Cook for another minute.

Add rice to the mixture, stir. Then add olive juice.

Cook for around 5 minutes, or until most of the liquid has cooked off and the rice is fully cooked.

Enjoyyyyy!

The finished product!
